Quinoa Greek Salad

QUINOA GREEK SALAD

  • 2 cups cooked, cooled quinoa
  • 1/4 cup finely chopped red onion
  • 1/2 cup chopped green pepper
  • 1/2 cup chopped red pepper
  • 1/2 cup crumbled feta cheese
  • 1/4 cup sliced black olives

Dressing:

  • 6 Tbsp olive oil
  • 2 Tbsp lemon juice
  • 1 tsp dried oregano or 1 Tbsp fresh oregano
  • 1/4 tsp sea salt
  • pepper to taste

Combine ingredients.  Refrigerate and allow to sit for at least an hour before serving
