Dark Chocolate Bark

Today, I am blog hoppin'.  My friend Shauna, over at Satori Design For Living asked me to participate in her cookie exchange.  Yum!  How could I say no?  It is always nice to share favorite recipes with friends.  It is a guarantee that you will be getting the best of their recipes while sharing yours.  I shared a great recipe for Chocolate Bark that our household really likes and being dark chocolate, it is full of antioxidants and magnesium among other things.  It is topped with cranberries, raw pistachios and piped with a little white chocolate.   You cannot go wrong with that kind of combination and it is not baked, so it is quick to make.

Dark Chocolate Bark

  • 10 oz chopped 70% dark chocolate
  • ¼ cup dried cranberries
  • ¼ cup finely chopped raw, shelled pistachios
  • 1 oz white chocolate

Line a baking sheet with parchment paper and set aside.

Melt dark chocolate in a double boiler or in a glass/metal bowl set over simmering water.  Stir often until completely melted.

Spread the chocolate into a rectangle on the parchment lined pan.  Sprinkle chocolate with cranberries and pistachios and allow to set.  Refrigerating will speed up the setting time.  Once set, melt white chocolate, spoon into a sandwich bag, cutting the tip out of the corner so the bag can be used like a pastry bag.  Pipe white chocolate over the chocolate bark. Allow to set.

Break or cut into 16 pieces.  Enjoy!
