Almond Flour Sugar Cookies

High protein, almond flour sugar cookies

The Christmas Season is upon us and the baking bug hit me this weekend!  I made a couple of different cookies, but this morning I want to share my sugar cookies with you.  This is a delicious recipe that makes buttery, sweet cookies without the use of wheat flour or white sugar.

Ingredients:

  • 2 1/2 cups blanched almond flour
  • 1/4 tsp sea salt
  • 1/4 tsp baking soda
  • 1/2 cup softened butter*
  • 1/3 cup pure liquid honey
  • 1 tsp pure vanilla extract

Using an electric mixer or some good biceps, mix together the softened butter, honey and vanilla until smooth and creamy.  Gradually blend in almond flour, sea salt and baking soda.  Mix until well combined.  Chill dough in refrigerator at least one hour.  Longer if you would like or freeze for use another day.

Preheat oven to 325F.  Divide dough in half and work with half at a time, refrigerating second half to stay chillled.  

To roll this dough easily, put half on a piece of parchment and place another piece of parchment over top.  Roll out between the two sheets of parchment.  When the dough is about 1/4 inch thick, maybe a little less, cut using cutters.  Gently remove and place on a parchment-lined baking sheet.  Place scrap dough back into refrigerator to re-chill.

Bake cookies for about 7 min.  Keep an eye on them during the last 2 min of baking, as they go from baked to burnt quickly.

*Note that you can use butter or coconut oil in this recipe interchangeably, or in combination of half and half as well.
