My hubby loves Pumpkin Granola Spice cereal, but it is highly processed, full of sugar and not that high in fibre, so I thought I would try making my own. It turned out to be very yummy and I had to hide some just so I could photograph it for the blog!
- 3/4 cup cooked pumpkin puree (canned is an option)
- 1/2 cup honey
- 2 Tbsp orange juice
- 3 tsp cinnamon
- 1 1/2 tsp ginger
- Pinch of cloves
- Pinch of nutmeg
- 1 tsp vanilla
Nut & Seed Mixture
- 2 cup flaked coconut
- 2 cup sliced almonds
- 1 cup pumpkin seeds
- 1 cup sunflower seeds
- 1 cup dried currants (or raisins)
In a small bowl, combine pumpkin, honey, OJ, vanilla and spices. Stir well to mix. Set aside. In a large bowl, mix together the remainder of ingredients. Pour spice mixture over the nut mixture and stir well to coat all ingredients.
Spread thinly on pans or dehydrator trays. Dehydrate for 24 hours. Alternately, place in oven at lowest setting to dry. Remove from oven when dry. I am unsure how long it will take as I always dehydrate my granola.
