These are moist cookies with raisins, coconut, ginger and cinnamon. Made with coconut flour which has the highest fibre content of any flour and is fairly high in protein, they are a healthy treat! They are Paleo, SCD, and Gaps friendly. Be forewarned coconut flour cannot be directly substituted for grain flour or nut flour as it has a drier consistency which doesn't lend to binding the way other flours do.

Coconut Flour Spice Cookies
- 1 cup butter or coconut oil (room temperature)
- 8 eggs
- 1 cup honey
- 1 1/2 cups coconut flour
- 1 cup flaked coconut
- 1/2 - 1 cup raisins
- 1 tsp vanilla extract
- 3 tsp cinnamon
- 1 1/2 tsp ginger
- 1/2 tsp sea salt
Preheat oven to 350F. Beat the butter to cream, when it is fluffy and smooth, add the honey, vanilla, cinnamon and ginger. Add the eggs and when incorporated, add the coconut flour, flaked coconut and raisins.
Using a cookie scoop or spoon drop onto a parchment lined cookie sheet. Flatten each cookie a bit with a fork. Sprinkle with more cinnamon.
Bake at 350F for approximately 15 minutes. Enjoy!
