If you have an abundance of Zucchini, I have a recipe for you! It is easy, delicious and a great way to use up young zucchini.
Thinly slice a couple of zucchini, a mandoline works wonderfully for this, but I have used a knife as well. In the meantime, heat a pan over medium high heat, adding a combination of olive oil and coconut oil. Saute the zucchini until softened and a little browned. Snip fresh dill over, or alternately sprinkle with dried dill. Squeeze 1/2 fresh lemon over all. Serve and enjoy!
